Sydney’s Maybe Sammy, the first cocktail bar from the owners of Maybe Frank, opened at The Rocks in January 2019. With the collective experience of an award-winning bartending team hand-selected from some of the best bars in the world, Maybe Sammy is here and he’s ready to play.

 

The Hollywood Regency-meets-Palm Springs design of the venue is reflective of a glam 1950s bar; think classic elegance with a splash of extravagance. The inspiration comes from the roaring fifties, the rebirth of cool, the era where fashion and fun prevailed. A time when The Rat Pack and Hollywood glamour were revered and admired. Maybe Sammy’s signature cocktails are named after some of ‘the boys’ favourite haunts on the Las Vegas strip. These clever cocktails are now made and bottled to create an easy cocktail delivery service to supply their loyal audience, anywhere and anytime.

 

Maybe Sammy is co-owned by Maybe Frank founders Stefano Catino and Vince Lombardo, as well as Maybe Frank’s Creative Director, Andrea Gualdi, who collaborated with Waterford earlier this year for our ‘Meet the Mixologist’ digital campaign. It’s Gualdi who has taken the lead on the Maybe Sammy cocktail list, and we’re excited to be bringing these to you with another very special collaboration.

About the Cocktails

The Sammy (100ml)

Vodka, Aperol, Vermouth Bianco & Peach Tea.

The Frank (100ml)

Campari, Tequila Blanco, Mezcal, Montenegro, Dry Vermouth.

How to store/serve:

  • Store in the fridge and enjoy in your favourite Waterford glass.
  • Neat or over ice, it’s your choice.
  • Add a zest of citrus or even some bubbles to make it a nice hi-ball.

    Favourite cocktail and why:

    Margaritas of course! The margarita is an easy to make, happy drink that is great for enjoying with family and friends.

    What do you love about making cocktails?

    I absolutely love the creativity side of cocktail making. I find it very relaxing and enjoyable. I love coming up with new recipe and garnishing/styling ideas. The Margarita Mum brings me so much joy and happiness. What’s the saying about doing something you love and never working a day in your life? Well, this is something I want to work hard at, and I love it.

    What’s the best rum recipe for beginners?

    Definitely a Pina Colada! Who doesn’t love a pina colada?! 

     What’s your favourite Waterford glass?

    I absolutely love the Mixology Rum Large Coupe glass. It is fabulous for margaritas, martinis and daiquiris.

     

    What are the upcoming cocktail trends?

     Cocktail and drink recipes are everywhere now, and there is so much information for home bar enthusiasts to create delicious drinks at home. I have seen an increase in the popularity of well stocked bar trolleys at home. 

    One of the other biggest emerging trends, is low and no alcohol ‘spirits’ including aperitifs, gin, dark spirits and vodka that are offering consumers alternatives to drinking alcohol. My mocktail creations are becoming increasingly popular and I am being regularly asked by followers of the margarita mum and brands to create mocktails!

    Like mum, Strawberry Daiquiris are a cause for celebration! To wrap up Rhonda’s Mother’s Day cocktail recipes, enjoy this cocktail classic with a minty sorbet twist!

     

     

    The Margarita Mum Strawberry Daiquiri
    Featuring our Mixology Rum Large Coupes and Cocktail Shaker

    Ingredients

    • 60ml Light rum
    • 15ml Freshly squeezed lime juice
    • 30ml Simple syrup
    • 3 Strawberries

    For the sorbet:

    • 2 Cups frozen strawberries
    • 1 Cup ice
    • 6 Mint leaves

    Method

    STEP 1: Prepare the sorbet first. Place 2 cups of frozen strawberries, 1 cup ice, 6 mint leaves and dash of water into a high-speed blender and whiz until a sorbet consistency is achieved. Add more water if required. Sugar is optional here! If you like to live on the sweeter side, add sugar to taste.

    STEP 2: Muddle the strawberries in a Cocktail Shaker.

    STEP 3: Add all other ingredients with ice and shake vigorously until combined.

    STEP 4: Spoon the delicious sorbet into the Large Coupes and slowly pour (double strain) the cocktail around the sorbet.

    FINISH: Garnish with strawberries and edible flowers.


    In the midst of the creative process for this recipe, Rhonda couldn’t decide which rum cocktail was more delicious: A Planter or a Hurricane Punch. The solution was quite simple: why not combine them both?

     

     

    The Margarita Mum Planter Hurricane Punch
    Featuring our Mixology Rum Hi-Ball, Hurricane and Pitcher

    Ingredients

    • 30ml Rum (Gold)
    • 30ml Rum (Light)
    • 30ml Unsweetened pineapple juice
    • 30ml Fresh orange juice
    • 15ml Lime juice
    • 15ml Grenadine
    • 1 Teaspoon passion fruit pulp
    • Dehydrated orange and pineapple slices
    • Fresh Mint

    Method

    STEP 1: Fill a hi-ball and a hurricane glass with ice.

    STEP 2: Place dehydrated oranges in a pitcher and pour in all ingredients. Stir well until combined.

    STEP 3: Pour all ingredients into a cocktail shaker with ice and shake vigorously until combined.

    STEP 4: Pour into your hi-ball and hurricane glasses.

    FINISH: Garnish with dehydrated orange and pineapple slices, as well as fresh mint.


    This recipe is Rhonda’s spin on the ‘Knickerbocker’. The Knickerbocker is said to be a cocktail from the mid-1800s. Its name is based on the nickname of New York’s Dutch settlers who wore their pants (knickers) rolled up just below the knee.

     

    The Margarita Mum Knickerbocker
    Featuring our Mixology Rum Tumblers and Cocktail Shaker

    Ingredients

    • 45ml rum (gold)
    • 15ml Cointreau
    • 15ml homemade raspberry syrup
    • 15ml lime juice

    For the Raspberry Syrup

    • 1 cup frozen raspberries
    • 1 cup sugar or 2 tablespoons organic stevia
    • 1 cup water

    Method

    STEP 1: Place the syrup ingredients in a saucepan and bring to the boil. Reduce to a simmer until liquid halves. Allow to fully cool before use. For a sugar free version, you can substitute the sugar for 2 tablespoons of organic stevia. 

    STEP 2: Fill a couple tumblers with Ice.

    STEP 3: Pour all ingredients into a cocktail shaker with ice and shake vigorously until combined. 

    STEP 4: Double strain into the tumblers.

    FINISH: Serve with burnt dehydrated lime and fresh mint for a glorious garnish finish.

    QUICK & EASY EASTER COCKTAILS

    Rum Old Fashioned
    Featuring our Mixology Rum Tumbler

    • STEP 1: Place a sugar cube into a cocktail shaker.
       
    • STEP 2: Add 2 dashes of Angostura bitters, 2 dashes of orange bitters, a splash of water, an orange and lemon peel.

       

    • STEP 3: Crush the ingredients and then add 60ml of aged rum.

       

    • STEP 4: Fill the shaker with ice cubes and stir.

       

    • FINISH: Strain into a tumbler over fresh crushed ice
      and garnish with an orange wedge and a cherry.

    Raspberry Tai
    Featuring our Mixology Rum Hurricane

    • STEP 1: In a cocktail shaker, crush 7-8 raspberries
      with a handful of fresh mint leaves.

        

    • STEP 2: Add 15ml of orgeat syrup, 15ml of Curacao, 30ml
      of dark rum and 30ml of light rum.

       

    • STEP 3: Fill your shaker with ice, attach the lid and shake.

       

    • FINISH: Strain into a hurricane glass over fresh crushed ice and garnish with a lime wedge, mint bouquet and raspberry.

      Favourite cocktail and why:

      Old Fashioned – a true classic that never goes out of style and is great to linger over.

      How did you become a mixologist?

      Having worked in the bar industry for over 10 years, I was fortunate enough to hone my craft and learn important lessons about every aspect of bar management. But nothing gripped me like bartending. As soon as I started mixing drinks I fell in love with the skill, craft and intelligence behind recipe creation and execution, and wanted to learn more and more.

      What do you love about making cocktails?

      Balancing flavours and exploring different combinations, because that’s how you find out what works and what can work better. I find that mocktail recipes are really rewarding to create, because to mimic a classic cocktail’s flavour after removing alcohol from the recipe is a real challenge. I also love riffing with old school classics like the Piña Colada, Mojito or Daiquiri and doing things a little differently. Some say ‘if it isn’t broken then don’t fix it’, but where’s the fun in that?

      What’s the best rum recipe for beginners?

      The Mojito. An absolute classic serve with a simple rum recipe. And, even if you don’t make the perfect mix, it still tastes like lying on warm sand in the hot Caribbean sun. It’s an iconic rum serve that all beginners should respect and is great to learn and to master. If low ABV cocktails are your thing, take a look at my healthy mocktail Mojito below. No rum, same great taste and perfect for Dry July.

      What are the upcoming cocktails trends?

      People are more health-conscious now, and that’s given rise to low ABV and non alcoholic cocktails. I don’t think that will change in the near future – mocktail recipes are here to stay. I also think people are really enjoying simple cocktails more now. People don’t want to spend hours in the kitchen mixing lengthy and complicated cocktails; they want simple cocktail recipes that contain easy and accessible ingredients, with lots of fresh fruits to elevate the colours.

      What’s your favourite Waterford glass?

      I’m in love with the new Mixology Rum collection, especially the Circon Tumbler and the Cicron Large Coupe. To me, the design of these glasses is sheer perfection. The circles around the base feel brilliant in your hand, and the typical generous weight of these Waterford glasses really elevates the occasion.

      Melisa’s Mocktails & Shocktails

      Kiwi Mojito Mocktail

      • In a cocktail shaker, crush together 1 peeled kiwi and 8 mint leaves and 2tbsp of simple syrup
      • Add lime juice, then fill your shaker with ice cubes and shake
      • Strain into a hi-ball glass over crushed ice and garnish with slices of fresh kiwi and mint.

      Watermleon Daiquiri

      • In a cocktail shaker, crush 6 chunks of fresh watermelon
      • Add 85ml of light rum, 30ml of lavender syrup and 40ml of fresh lime juice
      • Fill your shaker with ice, attach a lid and shake.
      • Strain into a large coupe, garnish with a viola petal and enjoy.
